Notification (or smartwatch) response
If you have a device with Nougat (or later), the easiest way is to reply to the message directly from the notification. Lower the drop down menu and reply message without opening the app but clicking on the Reply item at notification.
If you have a Wear OS smartwatch on your wrist, you can reply to WhatsApp messages directly from your watch and make sure it doesn't appear online. Not even if you reply to the message without clicking Reply, but displaying the whole conversation.

Answer without being online
- Disable data and WIFI connection on your smartphone.
- Open WhatsApp and the chat you are interested in.
- Write the message.
- Close WhatsApp.
- Reactivate the WIFI or data connection.
- WhatsApp will send the message, but will not make it appear online.
Bnus: How to read an unknown WhatsApp message with Unseen
Unseen is an application that allows you to view unknown WhatsApp, Telegram, Viber and Facebook Messenger messages without being online. This trick will not allow you to reply to offline messages, but only to read incoming messages without others knowing. So you can take as long as you want before you answer.
By clicking on the WhatsApp tab, you can read the message and your contact will know to read the message only when you click Reply on WhatsApp. Thereafter, you will be redirected to the WhatsApp application and out of coverage again. Small note: The application does not always work as it should with groups.
